Crispy Oatmeal Florentines

When I think of homemade baked goods, I generally dream of fuuudgy brownies and sofffft cookies. Soft and chewy treats are definitely my preference, however there are a few exceptions - one of which is the crispy, crunchy florentine.

Florentines are thin lace cookies traditionally made with chopped almonds. Unfortunately Taste Tester can’t eat nuts, so I’ve reluctantly avoided making them. You can then understand my delight when I came across a nut-free recipe for Crispy Oatmeal Florentines with Peanut Butter-Caramel Filling in Jill O’Connor’s Sticky, Chewy, Messy, Gooey. No nuts and they have peanut butter? Yes!

I made the small adjustment of adding a little chocolate drizzle, to dress em up and to get to that optimal CPB combo… surprise, surprise!

Despite the lack of nuts, they still had a really nice crunch to them. They were good, if a little sweet. If you’re into crunchy cookies, you’re sure to love em.

Next time around, I think I would use half peanut butter and half caramels for the filling instead of just a little peanut butter with the 25 caramels as directed. There wasn’t really enough peanut butter in the recipe to register on my peanut-butter-lovin’-radar. The dominant flavor was a buttery caramel with subtle hints of chocolate and peanut butter. That’s cool, I’m down with caramel - I just thought it was a little misleading to put ‘peanut butter’ in the recipe’s title when there isn’t a whole lot of it in the recipe.

That said, I still managed to enjoy and devour them. :-P See that lovely filling oozing out a little? Mmmm…

I thought this was a nice change-up to the usual ‘soft and chewy’ recipes that I tend to post. I look forward to trying out more goodies from Sticky, Chewy, Messy, Gooey! Get yourself a copy at Amazon.

Notes

  • I baked mine a good 5 minutes longer than the recipe instructed so that they would get really brown and crispy.
  • Do not attempt this recipe if you do not own an ice cream scoop. The batter is really tough and would be significantly harder to scoop without one.
  • I melted a little semi-sweet chocolate in the microwave, whisked until smooth and piped designs on the cookies as Taste Tester watched the Yankees / Phillies game 4. I piped the Yankees logo on one of the cookies and they proceeded to lose. Perhaps my cookies are bad luck?
  • As mentioned above, next time I would try using 1/2 pb, 1/2 caramel ratio for the filling. Also, add milk as needed to thin it out so you don’t end up with rock hard caramel in the middle of your cookies.
  • Taste Tester helped apply the filling to the cookies quickly before it hardened up. I’d recommend asking someone to help you, if possible. It also helps if they are motivated by sweets, because they probably work faster. :-P
Crispy Oatmeal Florentines with Peanut Butter-Caramel Filling
Yields 12 to 15 cookie sandwiches
From Sticky, Chewy, Messy, Gooey by Jill O'Connor, p. 94

Ingredients
2/3 cup sugar
1/2 cup (1 stick) unsalted butter 1/3 cup light corn syrup
1 1/4 cups old-fashioned rolled oats
1 cup cake flour, sifted and then measured
pinch of salt

For the Peanut Butter-Caramel Filling:
7 oz caramel candies (about 25 individual candies), unwrapped
3 Tbsp creamy peanut butter
1/2 tsp pure vanilla extract

Directions
1. In a heavy-bottomed saucepan over medium heat, combine the sugar, butter and corn syrup. Cook, stirring constantly, until the butter is melted and the mixture is smooth and combined.

2. Increase the heat to high and bring the mixture to a boil. Remove from heat and stir in the oats. Add the flour and salt and stir until smooth. Transfer the batter to a bowl to cool. Cover the bowl and refrigerate the batter for at least 1 hour. At this point the batter can be refrigerated for up to 1 week. The batter will be very stiff.

3. Position a rack in the middle of the oven and preheat to 325. Line a baking sheet with parchment paper.

4. Roll level Tablespoons of the batter between your palms to form small balls. Place them on the prepared baking sheet at least 3 inches apart. Bake the florentines until they are flat, lacy and a deep glossy golden brown, 7 to 10 minutes. Transfer to a wire rack to cool completely on the baking shet.

5. To make the filling: Combine the caramels, peanut butter, and vanilla in a microwave-safe bowl. Microwave on high for 1 minute. Remove and stir the mixture until smooth and combined. If the caramels are not completely melted, continue to microwave for 30-second intervals and stir until smooth.

6. Use a metal spatula to remove a cooled florentine from the baking sheet. Spread 2 or 3 teaspoons of the peanut butter-caramel filling over the bottom of the cookie and sandwich it with a second florentine.

7. The florentines will keep, tightly covered, for up to 2 days. After this time they will start to lose their crispness and get a little soft and chewy. Yum!
